Ingredients

  • 1 cup Sunflower seeds
  • 0.5 cup Flaxseeds
  • 0.25 cup Chia seeds
  • 0.5 cup Pumpkin seeds
  • 1 medium, grated Zucchini
  • 1 medium, grated Carrot
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 clove, minced Garlic
  • 0.5 teaspoons Sea salt
  • 1 teaspoon, finely chopped Herbs (e.g., rosemary, thyme)
  • 0.25 cup Water

Directions

Step 1

1. Soak the sunflower seeds, flaxseeds, chia seeds, and pumpkin seeds in separate bowls with water for 4-6 hours, or until they are soft and mildly sprouted. Drain and rinse well.

Step 2

2. In a large mixing bowl, combine the soaked seeds with the grated zucchini, carrot, olive oil, lemon juice, garlic, sea salt, and your choice of finely chopped herbs.

Step 3

3. Slowly add water to the mixture, a little at a time, until the ingredients bind together and form a thick paste-like consistency.

Step 4

4. Spread the mixture evenly onto a dehydrator tray lined with parchment paper or a silicon sheet, about 1/4-inch thick.

Step 5

5. Score the mixture into cracker-sized pieces with a knife or pizza cutter to make separating them easier after drying.

Step 6

6. Dehydrate at 115°F (46°C) for 12-16 hours or until completely crisp, flipping the cracker sheet halfway through drying if necessary.

Step 7

7. Once fully dehydrated and crisp, break the crackers apart along the scored lines and store in an airtight container.
