  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh cilantro, chopped (optional, for garnish)
  • 2 tablespoons sour cream (optional, for serving)
  • 0.5 cup shredded cheddar cheese (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

Add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Transfer the meat to a plate and set aside.

In the same pot, add the diced onion and garlic. Sauté until the onion is softened and translucent, about 3-4 minutes.
