Ingredients

  • 300 grams elbow macaroni
  • 200 grams mayonnaise
  • 100 grams sour cream
  • 2 tablespoons yellow mustard
  • 1 tablespoon white vinegar
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 medium carrot, finely chopped
  • 2 stalks celery stalks, finely chopped
  • 1 medium red bell pepper, finely chopped
  • 3 stalks green onions, finely sliced
  • 2 large hard-boiled eggs, chopped
  • 2 tablespoons fresh parsley, finely chopped

Directions

Step 1

Start by cooking the elbow macaroni according to the package instructions. Bring a large pot of salted water to a boil, add the macaroni, and cook until tender (approximately 8-10 minutes). Drain the macaroni and rinse under cold water to stop the cooking process. Set aside to cool completely.

Step 2

While the macaroni is cooling, prepare the vegetables. Finely chop the carrot, celery stalks, red bell pepper, and green onions. Set them aside.

Step 3

In a large mixing bowl, combine the mayonnaise, sour cream, yellow mustard, white vinegar, sugar, salt, and black pepper. Whisk everything together until smooth to form the dressing.

Step 4

Add the cooled macaroni to the mixing bowl with the dressing. Stir to coat the macaroni evenly in the dressing.

Step 5

Gently fold in the chopped vegetables, hard-boiled eggs, and parsley. Mix until everything is evenly distributed.

Step 6

Taste and adjust seasoning if needed, adding more salt or pepper to suit your preference.

Step 7

Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together. For best results, let the salad chill for 2-3 hours.

Step 8

Before serving, give the salad a gentle stir to redistribute the dressing. Serve cold, garnished with additional parsley if desired.
