Ingredients

  • 225 grams unsalted butter
  • 200 grams granulated sugar
  • 100 grams brown sugar
  • 2 large eggs
  • 100 grams golden syrup (or light corn syrup)
  • 500 grams all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 0.5 teaspoon ground cloves
  • 1 teaspoon ground black pepper
  • 0.5 teaspoon ground cardamom (optional)

Directions

Step 1

In a large mixing bowl, cream the unsalted butter, granulated sugar, and brown sugar together until light and fluffy.

Step 2

Add the eggs one at a time, beating well after each addition, followed by the golden syrup.

Step 3

In a separate bowl, sift together the all-purpose flour, baking soda, ground cinnamon, ground ginger, ground cloves, ground black pepper, and ground cardamom (if using).

Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
