Ingredients

  • 6 whole Clementines
  • 100 grams Granulated sugar
  • 250 milliliters Heavy cream
  • 150 grams Greek yogurt
  • 1 teaspoon Vanilla extract
  • 6 whole Digestive biscuits
  • 50 grams Unsalted butter
  • 6 whole Mint leaves

Directions

Step 1

Peel the clementines and blend them in a food processor or blender until smooth to create a puree. Strain the puree through a fine mesh sieve to remove any pulp.

Step 2

In a medium-sized bowl, mix the strained clementine puree with the granulated sugar and Greek yogurt until well combined. Chill this mixture in the refrigerator for 10 minutes.

Step 3

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the chilled clementine mixture, being careful not to deflate the mixture.

Step 4

Spoon the clementine mixture into individual serving glasses or jars, stopping halfway up each one. Place these in the freezer for 1 hour to set slightly.

Step 5

Meanwhile, crush the digestive biscuits into fine crumbs using a rolling pin or food processor. Melt the unsalted butter and mix it with the biscuit crumbs until it resembles wet sand.

Step 6

Remove the glasses from the freezer and add an even layer of the biscuit crumble on top of each parfait. Press lightly to compact them.

Step 7

Layer the remaining clementine mixture on top of the biscuit crumble. Return the glasses to the freezer for another 2 hours or until fully set.

Before serving, let the parfaits sit at room temperature for 5-10 minutes to soften slightly. Garnish each parfait with a dollop of whipped cream and a fresh mint leaf for an elegant touch.
