Ingredients

  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 tablespoons Light corn syrup
  • 0.25 teaspoons Salt
  • 1 teaspoon Vanilla extract
  • 1 cup Semi-sweet chocolate chips
  • 0.5 cup Chopped toasted almonds or pecans

Directions

Step 1

Prepare a baking sheet by lining it with parchment paper or a silicone baking mat. Set it aside.

Step 2

In a heavy-bottomed saucepan, combine the butter, granulated sugar, light corn syrup, and salt.

Step 3

Place the saucepan over medium heat, stirring constantly with a silicone or wooden spatula until the butter has melted and the sugar has dissolved.

Step 4

Continue to cook the mixture, stirring frequently, until it reaches 300°F (hard crack stage) on a candy thermometer. This process will take about 15–20 minutes. Be careful not to let the mixture burn.

Step 5

Once the toffee reaches 300°F, immediately remove it from the heat and stir in the vanilla extract.

Step 6

Quickly pour the hot toffee onto the prepared baking sheet, spreading it out evenly with a spatula to your desired thickness.

Step 7

While the toffee is still hot, sprinkle the chocolate chips evenly over the surface. Let them sit for 1–2 minutes to soften, then use a spatula to spread the melted chocolate into an even layer.

Step 8

Sprinkle the chopped toasted almonds or pecans over the melted chocolate, pressing them gently so they adhere.

Step 9

Allow the toffee to cool completely at room temperature, or place it in the refrigerator to set faster.

Step 10

Once the toffee is set and hardened, break it into pieces and store it in an airtight container for up to two weeks.
