Ingredients

  • 400 grams Broccoli florets
  • 3 large Eggs
  • 100 grams Almond flour
  • 50 grams Grated Parmesan cheese
  • 2 tablespoons Olive oil
  • 1 teaspoon Baking powder
  • 1 teaspoon Garlic powder
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

Preheat your oven to 180°C (356°F) and line a baking sheet with parchment paper.

Step 2

In a food processor, pulse the broccoli florets until they resemble a fine rice-like texture. You may need to do this in batches.

Step 3

Transfer the riced broccoli to a clean kitchen towel or cheesecloth. Squeeze out the excess moisture to prevent the bread from being soggy.

Step 4

In a large bowl, whisk the eggs until well beaten. Add the almond flour, grated Parmesan cheese, olive oil, baking powder, garlic powder, salt, and black pepper. Mix until combined.

Step 5

Stir the riced and dried broccoli into the bowl. Mix everything thoroughly until a dough-like consistency forms.

Step 6

Transfer the mixture to the prepared baking sheet. Flatten it out into a rectangle or desired bread shape, approximately 1 cm (0.4 inches) thick.

Step 7

Bake in the preheated oven for 25 minutes or until the edges are golden brown and the center is set.

Step 8

Remove from the oven and let it cool slightly. Slice it into pieces and enjoy as a side dish, snack, or low-carb bread substitute.
