Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon

  • 0.5 teaspoon salt
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 0.25 cup Greek yogurt (plain, unsweetened)
  • 2 teaspoons pure vanilla extract
  • 1.5 cups zucchini, grated and squeezed dry
  • 0.75 cup walnuts or pecans, chopped (optional)
  • 0.5 cup semi-sweet chocolate chips (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan or line it with parchment paper.

In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set aside.

In a large bowl, combine the granulated sugar, brown sugar, eggs, vegetable oil, Greek yogurt, and vanilla extract. Whisk until smooth and well combined.
