Ingredients

  • 4 medium Russet potatoes
  • 4 large Carrots
  • 2 medium Yellow onion
  • 4 tablespoons Unsalted butter
  • 1 cup Milk
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 large Smoked sausage (Dutch rookworst or kielbasa)
  • 0.5 teaspoon Dried thyme
  • 4 cups Water

Directions

Step 1

Peel the potatoes and carrots. Cut the potatoes into quarters and slice the carrots into thick coins.

Step 2

Peel and chop the onions into large chunks.

Step 3

Place the potatoes, carrots, and onions into a large pot. Add 4 cups of water and 1 teaspoon of salt. Bring to a boil over high heat.

Step 4

Once boiling, reduce the heat to medium and cook for 20-25 minutes, or until the potatoes and carrots are fork-tender.

Step 5

While the vegetables are cooking, heat the smoked sausage according to its package instructions. Most sausages can be simmered in a small amount of water for 10-12 minutes or baked in the oven.

When the vegetables are cooked, drain the water from the pot but reserve about 1 cup of the cooking liquid.

Add the butter and milk to the drained vegetables. Using a potato masher, mash the mixture until smooth. If the texture is too thick, add a little of the reserved cooking liquid, one tablespoon at a time, until your desired consistency is reached.

Season the mash with ground black pepper and dried thyme, adjusting salt to taste if needed.
