  • 3 pounds Chuck roast
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 large Yellow onion
  • 4 medium Carrots
  • 4 medium Potatoes
  • 4 whole Garlic cloves
  • 2 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water

Directions

Step 1

Season the chuck roast generously with salt and pepper on all sides.

Step 2

Heat a large skillet over medium-high heat and add the olive oil. Sear the roast for 2-3 minutes on each side until browned. Remove the roast and set aside.

Peel and dice the onion into large chunks. Peel the carrots and cut them into 2-inch pieces. Wash the potatoes and leave them whole or halve them if they are large.
