  • 1 pound beef stew meat
  • 1 pound pork shoulder
  • 12 ounces smoked kielbasa sausage
  • 1 large yellow onion
  • 3 medium carrots
  • 4 medium potatoes
  • 8 ounces button mushrooms
  • 0.5 head cabbage
  • 3 pieces garlic cloves
  • 3 tablespoons tomato paste
  • 4 cups beef broth
  • 1 cup sauerkraut
  • 2 pieces bay leaf
  • 1 teaspoon paprika
  • 0.5 teaspoon dried thyme
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 to taste salt
  • 2 tablespoons fresh parsley

Directions

Step 1

Cut the beef stew meat and pork shoulder into 1-inch cubes. Slice the kielbasa sausage into 1/4-inch thick rounds.

Step 2

Dice the yellow onion, peel and chop the carrots into bite-sized pieces, and cut the potatoes into chunks. Slice the mushrooms and shred the cabbage.

Step 3

Heat 1 tablespoon of olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the beef and pork shoulder in batches until browned on all sides. Remove and set aside.

Step 4

In the same pot, add the remaining 1 tablespoon of olive oil and sauté the onion until softened, about 5 minutes. Add the garlic and cook for 1 minute until fragrant.

Stir in the tomato paste and cook for another 2 minutes to deepen the flavors.

Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally, until the meat is tender and the vegetables are cooked through.

Taste and adjust seasoning as needed. Remove and discard bay leaves before serving.
