  • 2 pieces ribeye or sirloin steak
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 2 pieces garlic cloves, minced
  • 1 medium yellow onion, finely diced
  • 2 cups button mushrooms, sliced
  • 1 teaspoon fresh thyme, chopped
  • 1 cup dry red wine
  • 1 cup beef stock
  • 1 tablespoon heavy cream
  • 1 tablespoon fresh parsley, chopped (optional)

Directions

Step 1

Remove the steaks from the fridge 30 minutes before cooking to let them come to room temperature. Pat them dry with paper towels and season generously with salt and pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a heavy skillet over medium-high heat. Once the oil is shimmering, add the steaks to the pan and sear for 3-5 minutes on each side, depending on your desired doneness.

Step 3

Remove the steaks from the pan and set aside to rest, loosely covering them with foil.

Step 4

Reduce the heat to medium and add 1 tablespoon of butter and the remaining tablespoon of olive oil to the pan. Add the minced garlic, diced onion, and sliced mushrooms. Sauté for 5-7 minutes, until the onions are translucent and the mushrooms are golden and tender.

Add the chopped fresh thyme to the pan and stir for 30 seconds to release its aroma.

Stir in the beef stock and continue to simmer for another 5-7 minutes, letting the sauce thicken slightly.

Add the heavy cream and the remaining tablespoon of butter to the pan. Stir until the butter melts and the sauce becomes glossy and rich.

Taste the sauce and adjust the seasoning with additional salt and pepper if needed.

Step 10

Return the steaks to the pan and spoon some of the sauce over them. Let them warm through for 2-3 minutes.

Step 11

Serve the Hunter's Steak hot, garnished with optional fresh parsley, alongside your favorite sides such as roasted potatoes, mashed potatoes, or steamed vegetables.
