Ingredients

  • 2 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium, finely diced Shallot
  • 2 cloves, minced Garlic
  • 8 ounces, sliced Cremini mushrooms
  • 0.5 cup Dry white wine
  • 0.75 cup Chicken or beef stock
  • 1 tablespoon Tomato paste
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon, chopped (plus extra for garnish) Fresh parsley
  • 0.5 teaspoon (or to taste) Salt
  • 0.25 teaspoon (or to taste) Ground black pepper
  • 1 tablespoon Unsalted butter (optional for finishing)

Directions

Step 1

In a large skillet, heat the butter and olive oil over medium heat until the butter is melted and bubbling.

Step 2

Add the finely diced shallot and sauté for 2–3 minutes until softened and translucent.

Step 3

Stir in the minced garlic and cook for another 30 seconds, being careful not to let it burn.

Step 4

Add the sliced cremini mushrooms to the skillet and cook for 5–7 minutes, stirring occasionally, until the mushrooms are golden brown and tender.

Step 5

Pour in the dry white wine, scraping up any browned bits from the bottom of the pan with a wooden spoon. Allow the wine to simmer and reduce by half, about 2–3 minutes.

Step 6

Stir in the chicken or beef stock, tomato paste, fresh thyme leaves, and chopped parsley. Mix well to combine.

Step 7

Bring the sauce to a simmer and let it cook for 8–10 minutes, allowing the flavors to meld and the sauce to slightly thicken.

Step 8

Season the sauce with salt and ground black pepper to taste. If desired, add the optional tablespoon of unsalted butter for a silkier texture and richer flavor.

Step 9

Remove the skillet from the heat and garnish with additional chopped parsley before serving.

Step 10

Serve the Hunter's Sauce warm over your choice of protein, such as grilled chicken, pan-seared pork chops, or roasted venison.
