Ingredients

  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 medium Shallots, finely chopped
  • 2 cloves Garlic, minced
  • 200 grams Button mushrooms, sliced
  • 120 milliliters Dry white wine
  • 250 milliliters Chicken or veal stock
  • 1 tablespoon Tomato paste
  • 1 teaspoon Fresh thyme leaves
  • 1 tablespoon Fresh tarragon, finely chopped
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 60 milliliters Heavy cream (optional, for a richer sauce)

Directions

Step 1

Heat the unsalted butter and olive oil in a large skillet over medium heat until the butter is melted and starts to bubble.

Step 2

Add the chopped shallots and sauté for 2-3 minutes until they become translucent and fragrant.

Step 3

Stir in the minced garlic and cook for an additional 30 seconds, being careful not to burn it.

Step 4

Add the sliced button mushrooms and cook for 5-7 minutes, stirring occasionally, until the mushrooms soften and release their moisture.

Step 5

Pour in the dry white wine and deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 3-4 minutes until the wine reduces by half.

Step 6

Stir in the chicken or veal stock and tomato paste, ensuring the paste is fully dissolved into the liquid. Bring the mixture to a simmer.

Step 7

Add the fresh thyme, chopped tarragon, salt, and black pepper. Stir to combine and let the sauce simmer gently for 10-12 minutes, allowing it to thicken slightly.

Step 8

If you prefer a richer sauce, stir in the heavy cream and simmer for an additional 2 minutes.

Step 9

Taste and adjust seasoning as needed before serving.
