Ingredients

  • 4 pieces Venison steaks
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 2 medium Shallots, finely diced
  • 300 grams Mushrooms, sliced
  • 1 cup Red wine
  • 1 cup Beef stock
  • 1 teaspoon Fresh thyme leaves
  • 0.5 cup Heavy cream
  • 4 large Potatoes, peeled and quartered
  • 0.5 cup Milk
  • 2 tablespoons Parsley, chopped (optional, for garnish)

Directions

Step 1

Season the venison steaks on both sides with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of unsalted butter over medium-high heat.

Step 3

Sear the venison steaks for 3-4 minutes per side until browned. Remove from the skillet and set aside, tenting with foil to keep warm.

Step 4

In the same skillet, add the remaining olive oil and butter. Reduce the heat to medium.

Step 5

Add the minced garlic and diced shallots to the skillet, sautéing for 1-2 minutes until fragrant.

Step 6

Stir in the sliced mushrooms and cook until browned and softened, about 5-7 minutes.

Step 7

Deglaze the skillet by pouring in the red wine. Scrape up any browned bits from the bottom of the skillet.

Step 8

Add the beef stock and fresh thyme leaves. Simmer the sauce for 8-10 minutes, allowing it to reduce slightly.

Step 9

Stir in the heavy cream and cook for an additional 2-3 minutes. Adjust seasoning with salt and pepper to taste.

Step 10

While the sauce is simmering, prepare the mashed potatoes. Cook the peeled and quartered potatoes in boiling salted water until tender, about 15-20 minutes.

Step 11

Drain the potatoes and mash them with the milk and an extra pat of butter until smooth and creamy.

Step 12

To serve, plate a generous scoop of mashed potatoes, top with a venison steak, and spoon the mushroom sauce over the top.

Step 13

Garnish with chopped parsley if desired, and serve immediately.
