Ingredients

  • 1 pound Dried navy beans
  • 6 slices Bacon
  • 12 ounces Smoked sausage
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 14.5 ounces Canned diced tomatoes
  • 4 cups Chicken broth
  • 2 tablespoons Brown sugar
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Dried thyme
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the navy beans under cold water and remove any debris. Place them in a large bowl, cover with water, and soak overnight (at least 8 hours). Drain and rinse before using.

Step 2

In a skillet over medium heat, cook the bacon until crispy. Remove the bacon, crumble it, and set aside. Leave about 1 tablespoon of the bacon grease in the skillet.

Step 3

Slice the smoked sausage into bite-sized rounds and brown them in the same skillet with the remaining bacon grease. Remove the sausage and set aside.
