Ingredients

  • 1 pound ground beef
  • 1 medium yellow onion, diced
  • 2 cloves minced garlic
  • 3 medium russet potatoes, peeled and thinly sliced
  • 2 cups frozen mixed vegetables (peas, carrots, corn, and green beans)
  • 1 can (10.5 oz) cream of mushroom soup
  • 2 cups shredded cheddar cheese
  • 0.5 cup milk
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon paprika

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Heat the olive oil in a large skillet over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes. Drain excess fat if needed.

Step 3

Add the diced onion and minced garlic to the skillet. Cook for another 3 minutes until the onion softens. Season with salt, black pepper, and paprika. Remove from heat and set aside.

Step 4

Grease a 9x13-inch casserole dish with the butter. Layer the thinly sliced potatoes on the bottom of the dish, overlapping slightly.

Step 5

In a mixing bowl, combine the cream of mushroom soup and milk until smooth. Spread half of the mixture over the potatoes.

Step 6

Top the potato layer with the cooked ground beef mixture, spreading it out evenly. Add the frozen mixed vegetables on top of the beef.

Step 7

Pour the remaining soup mixture over the vegetables. Sprinkle the shredded cheddar cheese evenly over the entire casserole.

Step 8

Cover the dish with aluminum foil and bake in the preheated oven for 35 minutes.

Step 9

Remove the foil and continue baking for another 10 minutes, or until the cheese is bubbly and golden brown and the potatoes are fork-tender.

Step 10

Allow the casserole to rest for 5 minutes before serving.
