Ingredients

  • 400 grams firm tofu
  • 250 grams egg noodles
  • 1 medium onion
  • 3 cloves garlic
  • 1 medium red bell pepper
  • 2 tablespoons tomato paste
  • 2 teaspoons smoked paprika
  • 1 teaspoon sweet paprika
  • 2 tablespoons soy sauce
  • 250 ml vegetable stock
  • 2 tablespoons olive oil
  • 4 tablespoons sour cream (optional for garnish)
  • 2 tablespoons fresh parsley (optional for garnish)
  • 1 teaspoon black pepper
  • 0.5 teaspoon salt

Directions

Step 1

Press the tofu to remove excess water. Once pressed, cut it into bite-sized cubes.

Step 2

Cook the egg noodles according to the package instructions. Drain and set aside.

Step 3

Chop the onion, mince the garlic, and dice the red bell pepper.

Step 4

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the cubes of tofu and cook until golden on all sides, about 6-8 minutes. Remove the tofu from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of olive oil. Sauté the onion for 3-4 minutes until softened.
