Ingredients

  • 6 large potatoes
  • 2 medium onion
  • 3 garlic cloves
  • 2 tablespoons Hungarian sweet paprika
  • 1 teaspoon smoked paprika
  • 3 tablespoons vegetable oil
  • 4 cups vegetable broth
  • 2 tablespoons tomato paste
  • 2 medium carrot
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 optional sour cream (for garnish)

Directions

Step 1

Peel the potatoes and cut them into bite-sized chunks. Set aside.

Step 2

Dice the onions and mince the garlic cloves. Thinly slice the carrots.

Step 3

In a large pot, heat the vegetable oil over medium heat.

Step 4

Add the diced onions and sauté until translucent, about 5 minutes.

Step 5

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 6

Remove the pot from the heat and stir in the Hungarian sweet paprika and smoked paprika. This prevents the paprika from burning and becoming bitter.

Step 7

Return the pot to the heat and add the tomato paste. Stir to combine.

Step 8

Add the potato chunks and carrot slices to the pot, stirring to coat them in the paprika mixture.

Step 9

Pour in the vegetable broth, ensuring the potatoes are fully submerged. Bring the mixture to a boil.

Step 10

Reduce the heat to low, cover the pot, and simmer for 25-30 minutes, or until the potatoes and carrots are tender.

Step 11

Season with salt and black pepper, adjusting to taste.

Step 12

Before serving, sprinkle the dish with freshly chopped parsley for a pop of color and flavor.

Step 13

Serve hot, optionally garnished with a dollop of sour cream, and enjoy!
