Ingredients

  • 1 cup all-purpose flour
  • 1 cup milk
  • 0.5 cup water
  • 2 large eggs
  • 2 tablespoons vegetable oil
  • 0.25 teaspoon salt
  • 2 tablespoons butter
  • 2 tablespoons sugar
  • 1 teaspoon lemon zest

Directions

Step 1

In a large mixing bowl, whisk together the flour, milk, water, eggs, vegetable oil, salt, sugar, and lemon zest until smooth and free of lumps. Let the batter rest for at least 30 minutes to allow the flour to fully hydrate and to relax the gluten.

Step 2

Heat a non-stick skillet or crepe pan over medium heat and lightly brush with a small amount of butter.

Pour about 1/4 cup of the batter into the pan, tilting and rotating the pan quickly to spread the batter evenly over the surface.
