  • 2 bay leaves
  • 3 medium potatoes (peeled and cut into 1-inch cubes)
  • 2 cups sauerkraut (rinsed and drained)
  • 0.5 cup sour cream (optional, for serving)
  • 2 tablespoons fresh parsley (chopped, for garnish)

Directions

Step 1

Season the beef cubes with salt and black pepper and set aside.

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef cubes in batches, searing them on all sides until browned, about 5–7 minutes per batch. Remove the beef and set aside.
