Ingredients

  • 1 pound Pizza dough
  • 1 cup Hummus
  • 1 large Red onion
  • 2 tablespoons Olive oil
  • 2 whole Roasted red peppers
  • 1 cup Baby arugula
  • 0.5 cup Feta cheese
  • 2 tablespoons Fresh parsley
  • 1 teaspoon Lemon juice
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Preheat your oven to 475°F (245°C) and place a pizza stone or baking sheet inside to heat.

Step 2

If using store-bought roasted red peppers, drain them thoroughly and cut them into thin strips. If roasting your own peppers, place them directly on the oven rack or grill over an open flame until charred all over. Let cool, then peel, deseed, and slice into strips.

Step 3

Peel and thinly slice the red onion. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the onion slices and cook, stirring occasionally, for about 10-12 minutes or until they are caramelized and golden brown. Set aside.
