  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons tomato paste
  • 6 cups vegetable stock
  • 2 tablespoons lemon juice
  • 2 tablespoons, chopped fresh parsley or cilantro
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Start by rinsing the red lentils thoroughly under cold water until the water runs clear. Set aside to drain.

Step 2

In a large pot, heat the olive oil over medium heat.

Add the diced onion, carrot, and celery. Sauté for 5-7 minutes until the vegetables are softened and the onion is translucent.

Stir in the minced garlic, ground cumin, coriander, paprika, and cayenne pepper. Cook for 1 minute until fragrant.
