Ingredients

  • 2 large leeks
  • 2 tablespoons butter
  • 0.5 cup heavy cream
  • 2 large eggs
  • 0.25 cup parmesan cheese
  • 0.5 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 2 sheets frozen puff pastry sheets
  • 1 tablespoon all-purpose flour
  • 1 teaspoon olive oil

Directions

Step 1

Preheat the oven to 375°F (190°C).

Step 2

Trim the leeks, slice them in half lengthwise, and clean thoroughly under running water. Pat dry and chop into thin slices.

Step 3

Heat the olive oil and butter in a large skillet over medium heat. Add the leeks and sauté for 8–10 minutes, or until they are soft and lightly golden. Remove from heat and let cool slightly.

Step 4

In a medium bowl, whisk together the eggs, heavy cream, Parmesan cheese, salt, and black pepper until smooth. Stir in the cooled leeks.

Step 5

Lightly flour a clean surface and roll out the puff pastry sheets. Using a round cookie cutter or glass (approximately 3 inches in diameter), cut out 12 circles from the sheets.

Step 6

Press each pastry circle into the cavities of a non-stick or greased muffin tin to form mini tart shells.

Step 7

Evenly divide the leek mixture among the prepared tart shells, filling each about three-quarters full.

Step 8

Bake in the preheated oven for 20–25 minutes, or until the filling is set and the pastry is golden brown.

Step 9

Remove the muffin tin from the oven and let the mini tarts cool for 5 minutes before carefully removing them from the tin.

Step 10

Serve warm or at room temperature, and enjoy these delicious mini leek tarts!
