Ingredients

  • 2 tablespoons olive oil
  • 1 large onion, finely chopped
  • 1 large carrot, diced
  • 1 celery stalk, diced
  • 2 garlic cloves, minced
  • 500 grams lean ground beef
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons tomato paste
  • 1 cup beef stock
  • 2 tablespoons all-purpose flour
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 sheets shortcrust pastry
  • 2 sheets puff pastry
  • 1 egg, beaten

Directions

Step 1

Preheat your oven to 200°C (400°F).

Step 2

Heat the olive oil in a large skillet over medium heat.

Step 3

Add the chopped onion, diced carrot, and diced celery, and cook for 5 minutes until softened.

Step 4

Stir in the minced garlic and cook for 1 minute until fragrant.

Step 5

Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon.

Step 6

Stir in the Worcestershire sauce, tomato paste, and all-purpose flour. Cook for 2 minutes to coat the beef.

Step 7

Gradually pour in the beef stock, stirring constantly, and let the mixture simmer for 10 minutes, or until thickened.

Step 8

Stir in the frozen peas, salt, and black pepper. Remove the skillet from the heat and allow the filling to cool slightly.

Step 9

Cut the shortcrust pastry into 4 circles to fit individual pie pans and press them into the pans, trimming any excess.

Step 10

Fill each pie with the beef mixture, leaving a small gap at the top.

Step 11

Cut the puff pastry into 4 circles slightly larger than the pie pans and place them over the filling as lids.

Step 12

Seal the edges by pressing them together with a fork, and cut a small slit in the center of each lid to allow steam to escape.

Step 13

Brush the puff pastry lids with the beaten egg.

Step 14

Place the pies on a baking sheet and bake for 25 minutes, or until golden brown and puffed.

Step 15

Remove the pies from the oven and let them cool for 5 minutes before serving.
