  • 6 pieces large eggs
  • 2 tablespoons milk
  • 200 grams raw prawns (peeled and deveined)
  • 100 grams baby spinach
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 2 pieces garlic cloves (minced)
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 tablespoon fresh parsley (chopped, for garnish)

Directions

Step 1

Crack the eggs into a bowl and whisk thoroughly with the milk, salt, and black pepper. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large nonstick pan over medium heat. Add the prawns and sprinkle them with smoked paprika. Cook for 2-3 minutes on each side until they are pink and fully cooked through. Remove the prawns from the pan and set aside.

In the same pan, add another tablespoon of olive oil and the butter. Once melted, add the minced garlic and sauté for 30 seconds until fragrant.
