Ingredients

  • 2 pounds Pork shoulder, diced into 1-inch cubes
  • 2 tablespoons Olive oil
  • 1 large Yellow onion, chopped
  • 4 cloves Garlic cloves, minced
  • 4 cups Chicken broth
  • 2 cups Roasted green chilies, chopped
  • 5 medium Tomatillos, husked and diced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 cup Cilantro, chopped
  • 1 tablespoon Lime juice
  • 0 Tortillas or rice (optional, for serving)

Directions

Step 1

Heat a large Dutch oven or heavy-bottomed pot over medium-high heat and add the olive oil.

Step 2

Season the pork shoulder cubes with salt and black pepper, then sear them in batches until browned on all sides. Remove the pork and set it aside.

Step 3

In the same pot, add the chopped onion and sauté for 4-5 minutes until softened. Add the minced garlic and sauté for an additional minute.

Step 4

Return the seared pork to the pot, then pour in the chicken broth. Stir to deglaze the pot, scraping up any browned bits from the bottom.

Step 5

Add the roasted green chilies, diced tomatillos, ground cumin, dried oregano, and salt. Stir well and bring the mixture to a simmer.

Step 6

Reduce the heat to low, cover the pot, and let it simmer gently for 60-75 minutes, or until the pork is tender and the flavors have melded together.

Step 7

Taste and adjust the seasoning as needed. Stir in the chopped cilantro and lime juice just before serving.

Step 8

Serve hot with warm tortillas or spooned over cooked rice. Enjoy!
