Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Whole wheat flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1 teaspoons Ground cinnamon
  • 0.5 cups Unsweetened applesauce
  • 0.5 cups Plain Greek yogurt (nonfat)
  • 0.33 cups Honey
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 0.25 cups Low-fat milk
  • 0.75 cups Dried berries (cranberries, blueberries, or a mix)
  • 0 Cooking spray

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly coat a 12-cup muffin tin with cooking spray or line with paper muffin liners.

Step 2

In a large mixing bowl, combine the all-purpose flour, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Whisk together until evenly mixed.

Step 3

In a separate medium-sized bowl, whisk together the applesauce, Greek yogurt, honey, egg, vanilla extract, and milk until smooth and well combined.

Step 4

Pour the wet ingredients into the bowl of dry ingredients. Gently fold together with a spatula until just combined—do not overmix, as this can make the muffins dense.

Step 5

Add the dried berries to the batter and fold them in gently to distribute evenly.

Step 6

Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full.

Step 7

Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffin tin from the oven and let cool for 5 minutes. Then, transfer the muffins to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. Enjoy your low-fat, berry-packed muffins!
