Ingredients

  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 6 cups yellow onions (thinly sliced)
  • 1 teaspoon granulated sugar
  • 1.5 teaspoons salt
  • 1 cup dry white wine
  • 6 cups beef stock
  • 3 fresh thyme sprigs
  • 1 bay leaf
  • 8 baguette slices (about 1 inch thick)
  • 2 cups gruyère cheese (shredded)
  • 0.5 cups Parmesan cheese (grated)

Directions

Step 1

In a large, heavy-bottomed pot or Dutch oven, melt the butter and olive oil over medium heat.

Step 2

Add the sliced onions to the pot and stir thoroughly to coat them in the butter and oil.

Step 3

Sprinkle the sugar and salt over the onions. Reduce heat to low and cook the onions, stirring occasionally, for 25-30 minutes or until they become deeply caramelized and golden brown.

Step 4

Pour in the white wine to deglaze the pot, scraping up any browned bits from the bottom. Simmer for 5 minutes until the wine reduces slightly.

Step 5

Add the beef stock, fresh thyme sprigs, and bay leaf to the pot. Bring the soup to a simmer and let it cook on low heat for 20 minutes. Taste and adjust seasoning as needed, removing the thyme and bay leaf before serving.

Step 6

Preheat your oven broiler. Arrange the baguette slices on a baking sheet and toast them under the broiler for 2-3 minutes per side until crisp and lightly golden.

Step 7

Ladle the soup into oven-safe bowls or crocks, leaving room at the top for the bread and cheese.

Step 8

Top each bowl of soup with 1-2 slices of toasted baguette. Generously sprinkle shredded Gruyère cheese and a bit of grated Parmesan over the top.

Step 9

Place the bowls on a baking sheet and broil for 3-5 minutes until the cheese is melted, bubbly, and lightly browned.

Step 10

Carefully remove from the oven, let cool slightly, and serve hot. Enjoy Hubby's Favorite French Onion Soup with extra baguette slices for dipping!
