Ingredients

  • 4 pieces Chicken breast, boneless and skinless
  • 1 cup All-purpose flour
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper, freshly ground
  • 4 tablespoons Unsalted butter
  • 3 tablespoons Olive oil
  • 1 cup Chicken stock
  • 0.5 cup Dry white wine
  • 3 tablespoons Lemon juice, freshly squeezed
  • 2 tablespoons Capers, drained
  • 2 tablespoons Parsley, chopped
  • 8 ounces Angel hair pasta
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound them to an even 1/4-inch thickness using a mallet or rolling pin.

Step 2

In a shallow dish, combine the flour, salt, and black pepper. Dredge the chicken pieces in the flour mixture, shaking off the excess.

Step 3

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the butter has melted and is sizzling, add the floured chicken breasts and cook for 3-4 minutes on each side, or until golden brown and cooked through.
