Preheat your oven to 275°F (135°C).
Remove the membrane from the underside of the baby back ribs by sliding a knife under it and peeling it away. Use a paper towel for a better grip if needed.
In a small bowl, mix the paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne (if using).
Rub the spice blend all over the ribs, making sure to coat both sides generously.
Wrap each rack of ribs tightly in aluminum foil, sealing the edges well to create a packet.
Place the foil-wrapped ribs on a baking sheet (meaty side up) and bake in the preheated oven for 3 hours, or until the ribs are tender.
While the ribs bake, prepare the glaze by combining apple cider vinegar, honey, and your favorite BBQ sauce in a saucepan. Heat over medium-low and stir until smooth. Set aside.

Remove the ribs from the oven or grill, let them rest for 5 minutes, and then slice them between the bones.
