  • 1 cup beef stock
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 bay leaf
  • 1 cup milk

  • 2 tablespoons fresh parsley, chopped (for garnish, optional)

Directions

Step 1

Heat the olive oil in a large, heavy-bottomed pot over medium heat.

Add the finely chopped onion and sauté until softened and translucent, about 5 minutes.

Stir in the minced garlic, grated carrot, and diced celery. Cook for another 3-4 minutes until the vegetables are softened.
