  • 60 ml Olive oil
  • 1 large Yellow onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 stick Cinnamon stick
  • 2 leaves Bay leaves
  • 400 grams Crushed tomatoes (canned)
  • 1 tbsp Tomato paste
  • 200 ml Dry white wine
  • 500 ml Water
  • 300 grams Short-cut macaroni (kofto makaronaki)
  • 1 tsp Sea salt
  • 0.5 tsp Freshly ground black pepper
  • 2 tbsp Parsley, finely chopped (for garnish)

Directions

Step 1

Clean the octopus thoroughly, removing the beak and internal organs, and rinse under cold water. If using frozen octopus, make sure it is fully thawed before proceeding.

Step 2

Cut the octopus into bite-sized pieces, approximately 3-4 cm in length.

Step 3

Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the chopped onion and cook until soft and translucent, about 5 minutes.

Stir in the minced garlic and cook for an additional 1 minute until fragrant.

Add the octopus pieces to the pot and cook over medium heat for 5-7 minutes, stirring occasionally, until they release their juices.
