Ingredients

  • 1 can (15 oz) black beans
  • 0.5 cup (uncooked) quinoa
  • 1 cup water
  • 0.5 cup breadcrumbs
  • 0.5 cup (finely chopped) red onion
  • 2 cloves (minced) garlic
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon soy sauce
  • 2 tablespoons barbecue sauce
  • 2 tablespoons olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 4 pieces burger buns
  • 4 leaves lettuce
  • 1 large (sliced) tomato
  • 8 pieces pickle slices
  • 0 optional burger toppings (e.g., cheese, mustard, ketchup, avocado)

Directions

Step 1

Rinse the quinoa under cold water and cook it by combining 0.5 cup of quinoa with 1 cup of water in a small pot. Bring to a boil, reduce heat to low, cover, and simmer for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside to cool.

Step 2

Drain and rinse the black beans, then transfer them to a large mixing bowl. Mash the beans with a fork or potato masher until mostly broken down. Some chunks are fine for texture.

Step 3

Add the cooked quinoa, breadcrumbs, finely chopped red onion, minced garlic, smoked paprika, ground cumin, soy sauce, barbecue sauce, salt, and black pepper to the mashed beans. Mix until the ingredients are well combined and the mixture holds together when pressed.

Step 4

Divide the mixture into four equal portions and shape each into a patty about 1/2-inch thick.

Step 5

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the patties in batches, two at a time, for 4-5 minutes on each side or until golden brown and heated through. Add more oil as needed for subsequent batches.

Step 6

Toast the burger buns in a toaster or on a hot skillet until lightly golden.

Step 7

Assemble the burgers by placing a lettuce leaf on the bottom half of each bun, followed by a veggie patty. Top with tomato slices, pickle slices, and any additional toppings of your choice. Finish with the top half of the bun.

Step 8

Serve immediately and enjoy your 'Houston S We Have a Veggie Burger' with your favorite sides!
