Start by trimming the artichokes. Cut off the top one-third of the artichoke and trim the tips of each leaf to remove the sharp edges. Snip the stem down to about 1 inch.
Cut each artichoke in half lengthwise and scoop out the fuzzy choke in the center with a spoon. Immediately rub the cut sides with a halved lemon to prevent browning.
Bring a large pot of water to a boil, squeeze the juice of one lemon into the water, and add a teaspoon of salt. Place the artichokes into the pot and boil for 15 minutes, or until the hearts are tender when pierced with a knife.
Drain the artichokes and pat them dry. Preheat a grill to medium-high heat while preparing the artichokes for grilling.

While the artichokes are grilling, prepare the remoulade. In a small bowl, combine mayonnaise, Dijon mustard, capers, pickle relish, hot sauce, paprika, and the minced garlic clove. Stir well to combine, then fold in the chopped parsley.
Serve the grilled artichokes immediately with the remoulade sauce on the side for dipping.
