  • 4 lbs Whole chicken
  • 2 sprigs Fresh rosemary
  • 4 sprigs Fresh thyme
  • 2 tablespoons Fresh parsley
  • 1 Lemon
  • 6 Garlic cloves
  • 3 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 teaspoons Salt
  • 1 teaspoons Black pepper
  • 1 cup Chicken broth

Directions

Step 1

Preheat your oven to 425°F (220°C).

Step 2

Remove the giblets from the chicken (if included), rinse the chicken inside and out with cold water, and pat it dry with paper towels.

Step 3

Season the inside cavity of the chicken with 1/2 teaspoon of salt and a few grinds of black pepper.

Step 4

Stuff the cavity with the rosemary sprigs, thyme sprigs, half of the parsley, half of a lemon (sliced), and 3 whole garlic cloves.

Step 5

Loosen the skin on the chicken breast by gently sliding your fingers under it. Spread 1 tablespoon of softened butter under the skin on both breasts.

Rub the chicken all over with 3 tablespoons of olive oil, ensuring to coat every part. Then sprinkle the remaining salt and black pepper evenly over the entire chicken.

Tuck the wing tips under the body of the chicken and tie the legs together with kitchen twine for even roasting.

In a roasting pan, add 1 cup of chicken broth, the remaining lemon (sliced), and the remaining garlic cloves, roughly smashed. Place the chicken on a rack in the roasting pan (or directly on the aromatics).

Roast the chicken in the preheated oven for 1 hour and 30 minutes, or until the internal temperature of the thickest part of the thigh registers 165°F (74°C) on a meat thermometer.

About halfway through cooking, baste the chicken with the pan juices to keep it moist and flavorful.

Remove the chicken from the oven and allow it to rest for 15 minutes before carving. Resting ensures the juices redistribute for a moist and tender chicken.
