  • 1 tablespoon Red chili paste
  • 0.5 cup Peanut butter (creamy)
  • 1 cup Coconut milk
  • 2 tablespoons Soy sauce
  • 1 tablespoon Lime juice
  • 1 tablespoon Brown sugar
  • 2 stalks Green onions, sliced
  • 2 tablespoons Chopped roasted peanuts

Directions

Step 1

Slice the chicken breasts into thin, bite-sized strips and season with salt and black pepper. Toss the chicken pieces in cornstarch until evenly coated.

Heat 2 tablespoons of vegetable oil in a large skillet or wok over medium-high heat. Once hot, add the chicken in a single layer. Cook for 5–6 minutes, flipping occasionally, until the chicken is golden and cooked through. Remove the chicken from the skillet and set aside.
