  • 4 medium-sized beets
  • 1 cup orange juice
  • 1 cup water
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoons ground ginger
  • 6 whole cloves
  • 2 bay leaves
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 1 tablespoon butter
  • 2 tablespoons fresh parsley (optional, for garnish)

Directions

Step 1

Scrub and rinse the beets thoroughly. Trim the tops and roots off, but leave the skins on to help retain their color and nutrients during cooking.

Step 2

In a large pot, combine the orange juice, water, honey, apple cider vinegar, ground cinnamon, ground ginger, whole cloves, bay leaves, salt, and black pepper. Stir to combine.

Step 3

Add the beets to the pot. Bring the liquid to a boil over medium-high heat, then reduce the heat to low. Cover the pot with a lid and allow the beets to simmer for 35–40 minutes, or until they are fork-tender.

Step 4

Once the beets are cooked, remove them from the pot with tongs and let them cool slightly until they’re safe to handle. Use a paper towel to gently rub off the skins.

Slice the peeled beets into wedges or rounds, depending on your preference, and transfer them back into the pot with the spiced liquid.
