Ingredients

  • 1 pound Hot Italian sausage
  • 1 tablespoon Olive oil
  • 1 medium, diced Onion
  • 3 cloves, minced Garlic
  • 2 medium, sliced Carrots
  • 2 sliced Celery stalks
  • 1 medium, diced Red bell pepper
  • 14 ounces Crushed tomatoes
  • 6 cups Chicken broth
  • 3 cups, chopped Kale
  • 2 medium, diced Potatoes
  • 1 whole Bay leaf
  • 1 teaspoon Dried basil
  • 1 teaspoon Dried oregano
  • 1 teaspoon (or to taste) Salt
  • 0.5 teaspoon (or to taste) Black pepper
  • 0.25 cup, grated (optional for garnish) Parmesan cheese
  • 2 tablespoons, chopped (optional for garnish) Parsley

Directions

Step 1

In a large soup pot or Dutch oven, heat olive oil over medium-high heat.

Step 2

Remove the casings from the hot Italian sausage (if applicable) and add the sausage to the pot. Cook, breaking it into crumbles with a wooden spoon, until browned and cooked through. Remove the sausage from the pot and set it aside.

Step 3

In the same pot, add the diced onion, minced garlic, sliced carrots, and celery. Sauté for about 5 minutes until the vegetables begin to soften.
