  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 cups fresh spinach or kale (optional)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • 1 lemon wedge (for serving, optional)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrots, and celery, and sauté for 5-7 minutes, until the vegetables are softened.
