Ingredients

  • 4 Knockwurst sausages
  • 1.5 pounds Baby potatoes
  • 6 slices Bacon
  • 1 medium Yellow onion
  • 0.25 cup White vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Granulated sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons, chopped Fresh parsley

Directions

Step 1

Wash the baby potatoes and cut them in half (or quarters if they are large).

Step 2

Place the potatoes in a large pot and cover with water. Bring to a boil, add a pinch of salt, and cook for 10-12 minutes, or until just fork-tender. Drain and set aside.

Step 3

While the potatoes are cooking, chop the bacon into small pieces. Heat a large skillet over medium heat and cook the bacon until crispy. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate. Keep the bacon grease in the skillet.
