Ingredients

  • 6 pieces hot dogs
  • 1 medium onion
  • 2 medium carrots
  • 3 medium potatoes
  • 2 pieces celery stalks
  • 2 pieces garlic cloves
  • 6 cups vegetable broth
  • 1 14-ounce can canned diced tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley

Directions

Step 1

Slice the hot dogs into bite-sized rounds and set aside.

Step 2

Peel and dice the onion, carrots, and potatoes into small cubes. Slice the celery thinly. Mince the garlic cloves.

Step 3

Heat the olive oil in a large pot over medium heat.

Step 4

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables soften and the onion becomes translucent.

Step 5

Stir in the minced garlic, oregano, and thyme. Cook for another 1-2 minutes until fragrant.

Step 6

Pour in the vegetable broth and add the diced potatoes. Bring the mixture to a boil, then reduce the heat to a simmer.

Step 7

Add the canned diced tomatoes (including their liquid) and stir well. Let the soup simmer for 10-15 minutes, or until the potatoes are tender.

Step 8

Once the potatoes are cooked through, add the sliced hot dogs to the pot. Simmer for an additional 5 minutes to heat the hot dogs through.

Step 9

Season the soup with salt and black pepper to taste.

Step 10

Ladle the hot dog soup into bowls and garnish with freshly chopped parsley.

Step 11

Serve immediately and enjoy!
