  • 2 cups Elbow macaroni
  • 4 pieces Hot dogs
  • 1 cup Cherry tomatoes
  • 1 medium Cucumber
  • 0.5 medium Red onion
  • 0.5 cup Shredded cheddar cheese
  • 0.5 cup Mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon Apple cider vinegar
  • 1 teaspoon Sugar
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 2 tablespoons Fresh parsley

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the elbow macaroni according to the package instructions until al dente. Drain and rinse with cold water to cool. Set aside.

While the pasta is cooking, slice the hot dogs into thin coins and lightly brown them in a skillet over medium heat with the olive oil. This should take about 4-5 minutes. Remove from heat and let them cool.
