Ingredients

  • 3 pounds Beef chuck roast
  • 1.5 teaspoons Salt
  • 1 teaspoon Ground black pepper
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 2 tablespoons Olive oil
  • 1 Yellow onion, sliced
  • 4 cups Beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Soy sauce
  • 2 Fresh thyme sprigs
  • 6 French rolls or hoagie rolls

Directions

Step 1

Season the beef chuck roast evenly with salt, ground black pepper, garlic powder, and onion powder.

Step 2

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the beef on all sides until browned, about 3-4 minutes per side.

Step 3

Transfer the beef to a slow cooker or a large pot if using stovetop cooking.

Step 4

In the same skillet, add the sliced onion and sauté for 2-3 minutes until softened. Transfer the onions to the slow cooker or pot.

Step 5

Pour beef broth, Worcestershire sauce, soy sauce, and add thyme sprigs into the cooking vessel with the beef.

Step 6

If using a slow cooker, cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and easily shreds. If using stovetop, cover and simmer on low heat for about 3-4 hours, checking occasionally to ensure the liquid level is sufficient.

Step 7

Once the beef is cooked, remove it from the pot and thinly slice or shred it using two forks.

Step 8

Strain the cooking liquid to remove solids, creating the au jus sauce. Adjust seasoning with additional salt or pepper if needed.

Step 9

Preheat the oven to 350°F (175°C) and warm the rolls for 5-7 minutes, if desired.

Step 10

Assemble the sandwiches by placing sliced beef on the rolls.

Step 11

Serve the sandwiches with a small bowl of au jus on the side for dipping. Enjoy hot!
