Ingredients

  • 6 slices Thick-cut bacon
  • 0.5 cup Yellow onion, finely minced
  • 0.25 cup Apple cider vinegar
  • 3 tablespoons Granulated sugar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon All-purpose flour
  • 0.5 cup Water
  • 0.25 teaspoon Salt
  • 0.25 teaspoon Ground black pepper

Directions

Step 1

Place the thick-cut bacon in a large skillet over medium heat. Cook until crispy, about 8-10 minutes, flipping halfway through. Once done, remove the bacon and place it on a paper towel-lined plate to drain. Reserve 3 tablespoons of the bacon drippings in the skillet and discard the rest.

Step 2

Add the finely minced onion to the reserved bacon drippings in the skillet. Cook over medium heat until the onion is soft and translucent, about 3-4 minutes.

Step 3

Sprinkle the all-purpose flour over the cooked onions. Stir constantly for 1 minute to create a roux that thickens the dressing.

Step 4

Reduce the heat to low and slowly whisk in the water, apple cider vinegar, granulated sugar, Dijon mustard, salt, and ground black pepper. Continue stirring until the mixture is smooth and begins to thicken, about 2-3 minutes.

Step 5

Crumble the cooked bacon into small pieces and stir it into the dressing. Allow the mixture to simmer on low heat for 1-2 minutes to meld the flavors.

Step 6

Taste and adjust seasoning if needed. Serve the hot bacon dressing warm over your favorite salad or roasted vegetables.
