Ingredients

  • 4 cups Chicken or vegetable broth
  • 1 cup Shiitake mushrooms, thinly sliced
  • 1 cup Firm tofu, cut into small cubes
  • 1 small Carrot, julienned
  • 3 tablespoons Soy sauce
  • 3 tablespoons Rice vinegar
  • 2 tablespoons Cornstarch
  • 2 tablespoons Water (for cornstarch slurry)
  • 0.5 teaspoons White pepper
  • 1 teaspoons Sesame oil
  • 1 large Egg, lightly beaten
  • 2 tablespoons Green onions, finely chopped
  • 1 teaspoons Chili oil (optional, for heat)

Directions

Step 1

In a medium-sized pot, heat the chicken or vegetable broth over medium-high heat until it starts to gently simmer.

Step 2

Add the shiitake mushrooms, cubed tofu, and julienned carrot to the pot. Let it simmer for about 5-7 minutes until the vegetables are tender.

Step 3

Stir in the soy sauce, rice vinegar, and white pepper, tasting and adjusting the seasoning if needed.

Step 4

In a small bowl, whisk together the cornstarch and water to create a slurry. Slowly pour the slurry into the simmering soup while stirring constantly to thicken the broth.

Step 5

Reduce the heat to low and drizzle the beaten egg into the soup in a thin stream while gently stirring in a circular motion to create the classic egg ribbons.

Step 6

Finish off the soup with a touch of sesame oil and a drizzle of chili oil, if using, for added depth of flavor and heat.

Step 7

Serve hot, garnished with chopped green onions. Enjoy your easy and flavorful hot and sour soup!
