Ingredients

  • 8 oz rice noodles
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp lime juice
  • 1 tsp fresh ginger, grated
  • 2 garlic cloves, minced
  • 0.5 tsp red chili flakes
  • 1 carrot, julienned
  • 1 cucumber, julienned
  • 1 red bell pepper, thinly sliced
  • 3 scallions, finely chopped
  • 0.25 cup fresh cilantro, chopped
  • 2 tbsp toasted sesame seeds
  • 2 tbsp crushed peanuts (optional)

Directions

Step 1

Cook the rice noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process. Set aside.

Step 2

In a small mixing bowl, whisk together sesame oil, soy sauce, rice vinegar, honey, lime juice, grated ginger, minced garlic, and red chili flakes. This will be your sesame dressing.
