Ingredients

  • 12 oz spaghetti or Chinese wheat noodles
  • 2 tbsp sesame oil
  • 3 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 3 tbsp tahini or peanut butter
  • 1 tbsp honey or sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tsp sriracha or chili oil (optional, for heat)
  • 2 tbsp water
  • 2 stalks green onions, sliced
  • 1 tbsp sesame seeds
  • 1 cucumber, julienned
  • 1 carrot, julienned
  • 1 cup cooked chicken, shredded (optional)

Directions

Step 1

Cook the noodles according to the package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Toss with 1 tablespoon of sesame oil to prevent sticking and set aside.

Step 2

In a medium mixing bowl, whisk together the soy sauce, rice vinegar, tahini or peanut butter, honey or sugar, minced garlic, grated ginger, remaining sesame oil, sriracha or chili oil (if using), and water until smooth and creamy. Adjust the seasoning to taste.

Step 3

Pour the sesame sauce over the cooked noodles and toss thoroughly to coat.
