Ingredients

  • 8 ounces Gruyère cheese
  • 8 ounces Emmental cheese
  • 1 cup Dry white wine
  • 1 large Garlic clove
  • 1 tablespoon Cornstarch
  • 2 teaspoons Kirsch (cherry brandy)
  • 1 teaspoon Lemon juice
  • 0.25 teaspoon Ground nutmeg
  • 0.25 teaspoon Freshly ground black pepper
  • 1 loaf Bread cubes (French baguette or sourdough)

Directions

Step 1

Grate the Gruyère and Emmental cheeses into a large bowl and set aside.

Step 2

Cut the loaf of bread into bite-sized cubes and set it aside for serving later.

Step 3

Rub the inside of a heavy-bottomed fondue pot (or a heavy saucepan) with the garlic clove. Discard the garlic afterward.

Step 4

Pour the white wine and lemon juice into the pot and heat over medium heat until the liquid is warm but not boiling.

Step 5

Reduce the heat to low and begin adding the grated cheeses gradually to the pot, stirring continuously in a figure-eight motion. Wait for each addition to melt before adding the next batch.

Step 6

In a small bowl, mix the cornstarch with the kirsch until smooth. Stir this mixture into the melted cheese.

Step 7

Continue to stir constantly until the mixture thickens and becomes smooth. At this point, add nutmeg and ground black pepper, tasting and adjusting seasoning as needed.

Step 8

Once fully melted and smooth, transfer the fondue pot to a tabletop burner to keep it warm.

Step 9

Serve the fondue immediately with bread cubes for dipping. Use fondue forks or skewers and enjoy!
