Ingredients

  • 2.5 lbs Russet potatoes
  • 6 tbsp Unsalted butter
  • 0.75 cups Heavy cream
  • 3 tbsp Prepared horseradish
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 Yellow onions (thinly sliced)
  • 2 tbsp Olive oil
  • 1 tsp Sugar
  • 2 cloves Garlic (minced)

Directions

Step 1

Peel the potatoes and cut them into evenly sized chunks. Place them in a large pot and cover with cold water.

Step 2

Add a generous pinch of salt to the water, bring to a boil, and cook the potatoes until they are fork-tender, about 15-20 minutes.

Step 3

While the potatoes are boiling, prepare the caramelized onions. Heat the olive oil in a large skillet over medium heat.

Add the thinly sliced onions and cook, stirring occasionally, for 15 minutes. Sprinkle with 1 teaspoon of sugar and continue cooking for another 10-15 minutes until deeply golden and caramelized. Add the minced garlic in the last 2 minutes of cooking and stir to combine. Remove from heat and set aside.
